Hi there! My name is Joe and I am the chief operating officer of Two Borders Food. You may be more familiar with one of our bbq lines, Caroline's Rub (www.carolinesrub.com (http://www.carolinesrub.com)).
I have been a smoker/griller all of my life, participating as both a contestant and judge throughout the US and Canada. My specialty is brisket, but I have been known to whip up a mean pork shoulder and ribs too. I currently compete under the team name "Half-Baked, Fully-Smoked".
For smoking, I currently use a Cookshack, and an offset trailer at competitions. For grilling I use a Vermont Castings and a Weber.
I look forward to chatting with you guys and I hope to be able to pick up a few tips as well as pass along a few to you...
