Ok I have a 8.5 lb Boston butt in the fridge after injecting it with applejuice salt sugar and two table spoons of wooster sauce.. Ready to put in the smoker about 6:00PM this evening and will take it off when the internal temp reaches 165* then FTC (foil towl chest) for at leaste 3 1/2 to 4 hrs. will use about four hours of smoke (apple wood) and about 12 hrs fo cook time on about 210*... When it's done it's done About once every thirty minutes in the final two hrs. spritz apple juice on the butt MMMMMMMGood :) Cajun
