What types of wood have you used?

So far I have experience with the following:
Apple, Cherry, Oak, and combinations of Oak and cherry or apple. I find that bacon cooks a little too quick to really absorb much smoke, but found that a relatively constant oak smoke for several hours works real well for a light smoked flavor with the ribs and pulled pork (which also comes out in chili if done that way as well). I haven't had too much success with the fruit woods getting a good smoke flavor, but then they generally are lighter and sweeter. Although maybe I just wasn't using enough as I started with those and then moved into oak with more experience...

I just picked up some hickory to play with and have heard good things about it.

I didn't seem to notice much of a skin discoloration from the fruit woods to be honest though. Maybe its more for a competition/restaurant thing.

What are your favorite woods to use for various meats? What are your favorites/ones you would not reccomend?

In texas, most people use Hickory wood. For chicken, I would consider apple as well.

I use primarily pecan wood. Any kind of nut wood is good though.

I also like fruit wood with the exception of cherry which I find has way to strong of a taste - almost a tar like aftertaste to me.

But pecan wood from my yard is what makes me happy - it's sweet and fragrant and burns very evenly.

maybe in Dallas, from the Hill Country on down it's pecan,oak,& mesquite from all my years of growing up down there.

here in Tn/Ky., I have 60 acres w/ just about everything on it so I do it like this-

pork & fowl get fruits &/or nut woods,sometimes sugar maple.

beef & sausage gets pecan,oak,& or mesquite.I still choke on having to pay for 'skeet considering back home it's basically considered a weed & a nusiance.

fish & shrimp- mesquite & or oak

bacon-pecan

the occasional goat(cabrito) mesquite & lava rock in a hole in the ground

note-bacon will take smoke well as long as it's patted dry first,same for fresh sausages.the casings have to be dry.

Gotta be either Pecan or Cherry, depending on what I've got cut at the moment and how dry things are.

I am a Hickory man thru and thru.

I will occasionally use some oak mixed in on Chicken (only chicken).

Usually good ole hickory.

I have pear, cherry, apricot and crabapple in my yard and use all on occasion.

If I had to pick a favourite it would be a pear/cherry mix.

All of the above, I have used some Chinaberry mixed in with Oak in the Tejas cooker, added a nice aroma.
