Award Winning Pork Chili Verde

I made this up for a chili cook-off a couple months ago. It won 1st place with 19 votes out of forty. The second place had 6 votes.
This is rated for women and children, so it's pretty low on the heat scale. Kick it up with Cayenne powder or some fresh chipotle, if you feel the need to burn!

Weet's Pork Chili Verde

2 Pounds lean pork - 1/2" cubes
1 Large onion - diced
1 Bulb garlic - minced
2 Jalapeno peppers - seeded and minced
2 Fresh Anaheim peppers - diced with seeds included
1 Can chicken broth
1 - 12 oz Can of whole tomatillos - drained and chopped
2 - 7 oz Can Ortega Fire Roasted diced green chiles
3 TBSP Ground cumin
2 TBSP Ground pasilla chile powder
2 TBSP Oregano
1/2 cup firmly packed cilantro - finely minced
2-15 oz cans canelloni beans (white kidney beans) drained
2 Cups frozen corn
Salt to taste

Dredge pork in flour
In a large frypan, brown pork in 3 TBSP of oil.
Remove pork to dutch oven.

Add onion, garlic, jalapeno and anaheim peppers to frypan and saute until tender. (Add a little oil if needed.)

Combine sauteed veggies with pork, in dutch oven.
Add chicken broth, tomatillos and canned chiles. (Mash up tomatillos real good.)

Add ground cumin, chili powder, oregano and fresh cilantro.

Cover pot and simmer on low for 90 minutes.

Add white canelloni beans and frozen corn. Salt to taste. Simmer for additional 10 minutes uncovered.

Serve with crushed tortilla chips, grated cheese and sour cream!

Cool! My wife always wanted me to make a green chili, so when I had some pork left over from making sausage, I decided to give it a shot. I just started throwing things in. I did my best to document everything and have since made it from this recipe. It turned out just as good. Now I'm a green chili fan!
